Monk Fruit Sweetener Ingredients: monk fruit extract, Erythritol
Monk Fruit contains sweetening components including mogroside V, mogroside II, mogroside III, mogroside IV, mogroside VI, among which mogroside V is the principal. Monk Fruit Extract is the result of extraction process for Mongroside V from Monk FRUIT, which is in powder form, with color from brown to white based on different contents of Mogroside V in the extract. Monk Fruit extract is freely soluble in water and is approximately 230-260 times sweeter than sucrose. It is non-nutritive sweetener. Erythritol is a sugar alcohol (or polyol) that is considered safe (GRAS) as a food additive in the United States. It occurs naturally in some fruit and fermented foods. Erythritol is 60¨C70% as sweet as sucrose (table sugar) yet it is almost noncaloric, does not affect blood sugar, does not cause tooth decay, and is partially absorbed by the body, excreted in urine and feces. Under U.S. Food and Drug Administration (FDA) labeling requirements, it has a caloric value of 0.2 kilocalories per gram (95% less than sugar and other carbohydrates). Japan and the United States label it as zero-calorie; the European Union labels it 0 kcal/g.
